Good evening loves!!! Hope all is well. Now, as for these fluffy babies you see here! I can't begin to tell you how scrumptious these banana pancakes were. Not your average pancakes at all. Nope....not one bit! So, get your taste buds ready to go all the way in on these for that perfect weekend brunch, dinner, hell whenever!
All you need:
1 large over ripe banana; mashed
1 3/4 c coconut flour (all purpose flour works just as well)
1 1/2 tbs coconut sugar
1 1/2 tbs baking powder
1 tbs ground cinnamon
2 tbs ground flax seed
1 tsp vanilla extract
dash of sea salt
3 tbs coconut oil
1 cup unsweetened almond milk
Melt butter spread
In a large mixing bowl, mash banana well.
Add coconut oil, vanilla, and almond milk.
Add flour, ground flax seed, sugar, baking powder, ground cinnamon, and sea salt.
Combine, mixing all ingredients well.
Heat about a tablespoon of butter spread in large skillet on med-high heat or griddle.
Use a ladle to scoop batter onto skillet. Once the center starts to bubble and the edges start to brown, flip. Cook an additional 4 minutes and remove to a plate. Repeat.
Spread the top of each cooked pancake with butter as you plate. Drizzle with raw Blue Agave and enjoy!
