Ground Turkey, Cilantro Baked Empanadas


Hey loves! As said, here's the recipe for these yummy Empanadas I made last week for dinner. I intended to prepare these this weekend, but they turned out to be for a quick week night's meal instead. Added yellow rice and a spinach salad for a complete meal.

With that being said, time was limited so I didn't feel like making homemade biscuits. Was super juiced I had a can of Pillsbury biscuits in the fridge. These babies were so good and sooooo filling!

Ingredients:

1 can of Pillsbury southern biscuits
1 lb farm fresh ground turkey
1- 15 oz can of tomato sauce
olive oil
2 minced garlic cloves
1 chopped onion
handful of chopped fresh cilantro leaves
1 diced jalapeno; seeds removed
onion powder
sea salt
pepper
garlic powder
parchment paper

Directions:

Spray a large non stick skillet with non-stick spray. Add ground turkey, onion, garlic, and jalapeno, to pan cooking thoroughly on med-high heat. Season to taste. Add tomato sauce, mixing well.. Fold in cilantro. Set aside to cool. Heat oven to 375 degrees.

Line a pan with parchment paper. Roll out and flatten each biscuit til it spreads a bit. Not too thin. For this you don't need a rolling pin, your hands will do just fine. Place a couple tablespoons of meat filling on one side of biscuit. Fold over and press the rounded sides together where they meet with a fork to seal. Repeat and brush the tops with olive oil for a crisp top.

Bake for about 15 minutes or until golden brown. Plate and enjoy!
