Happy Sunday loves!! As Winter is swiftly approaching, soups have been more constant than ever! Feeling a bit under the weather, so what's better than a big ole' pot of homemade Cabbage Soup.
This is always a family fave and hit the spot, juuuust right! This can stretch for days. Add whole grain Ciabatta rolls and voila! Comfort food coming up. Hope you enjoy this recipe as much as we do.
2 heads of cabbage; cored and chopped
about 1 cup of shredded carrots
4 garlic cloves; diced
1 diced onion
4-6 quarts organic Full Circle vegetable broth (can substitute for water + bouillon cubes), more if you like a lot of liquid
4-5 large diced roma tomatoes plus any juice
2 tbs olive oil
1 tbls chopped thyme
1 tbls chopped rosemary
1 tsp oregano
crushed red pepper (optional)
In a large stock pot, heat olive oil on med high heat. Saute onions and garlic until translucent, about 5 minutes. Add broth to pot, bring to a boil. Add cabbage and reduce heat to medium. Cook for about 12 minutes; add tomatoes with any juice from them. Add herbs and season to taste. Cover and reduce heat to a simmer for 20 minutes. Add shredded carrot to the pot, cover and simmer for 10 additional minutes.
*Add crushed red pepper to individual bowls (optional)
