Well, it's hump day and I must say, it's been a pretty trying week! Half way through and I'm already over it! This Mediterranean Tabbouleh (Tabouli) salad made it all that more better! Funny how food can make you happy huh? Healthy habits began for me in my kitchen. It's so very important to focus on a healthier way of life, being food (most importantly), wellness, the company we keep, and exercise. So, this bomb ass herb salad made me feel real good! Paired this with grilled salmon fillets and it was PERFECTION!
Now, if you haven't had or heard of this taste filled salad, your missing out! It's full of fresh herbs and veggies, with a bit of tangy, sweet & spicy flavor. Can be a full vegan/vegetarian meal alone or even grill some chicken breasts if that's your craving. This will be my lunch for the next few days. No complaints over here hunny! You will need:
2 c fresh parsley
2 c cooked quinoa
1 lb cherry tomatoes diced or halved
1 med red onion; diced
1 med cucumber
1/2-1 c fresh mint
3 tbs fresh squeezed lemon juice
1 tsp sea salt
1/2-1 tsp cayenne pepper
1/4 c raw honey
Cook quinoa according to package instructions. If you're like me, you've previously washed and stored your herbs and veggies in the fridge. If not, rinse thoroughly and chop parsley and mint. Dice onion, cucumber and tomato. Put all into large mixing bowl. Add cooked quinoa. Toss with lemon juice, honey, salt, cayenne pepper, and enjoy.
