Cilantro Citrus Grilled Chicken

Hey loves!!! So as I said on my Instagram about a week,  I would post this amazing recipe! I had to make it again and jot down the measurements. I'm so bad when it comes to this sometimes. I keep it all in the good ole memory bank (my head of course) which may not be the greatest thing, and from time to time, I don't measure to the tee. So here ya go!! This dish pairs really well with steamed brown rice & quinoa. I even used a couple of leftover pieces the following day for tacos. Mmmmm right! Enjoy!


6 organic chicken breast fillets (simply raised-foster farms thin sliced)
1/4 cup fresh lime juice
1/4 cup fresh lemon juice
1/4 cup organic orange juice
1/2 cup evoo
1 tsp onion powder
2 tbs sea salt or to taste
1 tsp ground pepper
1 tbs garlic powder
1 jalapeno; seeded and minced
about 1/2 bunch cilantro plus


Toss all ingredients together in blender or food processor, set aside. Rinse and pat chicken dry. Place pieces in large Ziploc bag, pour marinade into bag (reserving about 1/3 cup for basting) seal bag, turning and rubbing around to coat. Chill in the refrigerator for no less than 30 min. Much longer than if you like. Hell, leave it in all day and watch those flavors hit! When ready, fire up that grill or spray that good ole grill pan with non-stick and heat it up! Grill the chicken on each side til done throughout. As the chicken cooks, baste the side up, once you turn it, baste that side with the remaining marinade. Discard any left over marinade. Be careful not to overcook....dry chicken is not the business, yet under cooked surely ain't! Once it's all done, plate and let all those juices rest in for about 5 min. Sprinkle with a little extra cilantro and chow down!
