I posted this quick breakfast on my Instagram page @amathysssoul, so I wanted to share with you all.
All you need
whole grain muffin
liquid egg whites (amount on carton for 1 egg)
raw baby spinach
sea salt + pepper to taste
1/2 half avocado sliced
Melt butter for muffins + 1 tsp for pan
Butter and toast muffins under broiler oven. Heat saute pan on med heat, add tsp of butter, pour in egg white, season and cook. Plate on bottom half of muffin, add spinach then avo, cover with top. Enjoy!
