Easy Veggie Wraps

Hey loves!!! I posted these wraps on my Instagram page @amathysssoul several days ago and totally forgot to put it on this here blog! _______insert sad face with a tear. So as bomb as these were, I've made them again and devoured them!

All you need:

butter lettuce leaves; rinsed and pat dry

15 oz organic black beans; drained and rinsed

beef crumbles

1 diced red bell pepper

1 diced green bell pepper

4 oz diced green chiles

2 tbs sofrito goya

1 small diced jalapeno

1/2 tsp cumin

sea salt to taste

smoked paprika

1 clove minced garlic

1/2 diced onion

2-3 tbs evoo

plain greek yogurt (optional)


Place a large skillet over med heat and add oil, peppers, jalapeno, garlic, onions. Cook for 5 minutes then add black beans, beef crumbles, sofrito and seasonings. Cook an additional 6-8 minutes mixing frequently. 

Turn off fire and move to another burner. Add chiles, mixing throughout. Let sit and cool before spooning atop large lettuce leaves. Add a dollop of yogurt, sprinkle with smoked paprika.
