Pan Fried Lemon Pepper Salmon X Herb Quinoa



Ingredients

salmon fillet
handful of power greens
1 tbs lemon pepper seasoning
1 tbs evoo
1 tsp sea salt
organic white quinoa
1 vegetable bouillon cube
1 tsp Melt or Earth Balance
1 tbs finely chopped herbs (thyme, rosemary, parsley)

Directions

Marinade salmon in fridge 30 minutes prior to cooking with evoo, sea salt, lemon pepper. Take fish out, allowing it to come to room temperature while preparing the quinoa. Cook quinoa according to package instructions. Once the water boils, stir in bouillon cube, Melt,and herbs. Mix in quinoa and let cook.

Heat a saute pan on med heat. Add marinated salmon to pan, skin side up. Brown a bit, about 3-4 minutes each side. Turn over and brown skin side down. Plate atop greens drizzled in evoo. Squeeze a little bit of fresh lemon on top. Scoop a half cup of quinoa on the side.
