Sautéed Veggies w/Chicken Sausage atop Quinoa/Bulgar Mix

Happy Monday loves!!! I made this beautiful food creation over the weekend and it was AH-MA-ZING! Quick & simple...what's better than that! So grab or hit the market for these fresh veggies and other simple ingredients and let's get busy! 


2 tbs evoo
5 oz container organic kale
2 large sliced zucchini
1 diced red bell pepper
1 diced green bell pepper
2 cloves minced garlic
1 small diced onion
1 cup shredded carrots
12 oz pk (2) chicken sausages, sliced
2:1 ratio quinoa, bulgar grain mix
* Optional; garnish with fresh parmesan cheese


Heat oil in large skillet on med heat. Saute garlic, add sausage. Brown, cooking thoroughly.
In separate pot, cook grains as according to package directions.
Add veggies and onions to skillet. Saute for about 5-8 minutes, mixing frequently. Turn off fire, add chopped kale, cover to steam. After about 6 minutes, season with lemon pepper, garlic powder and sprinkle with himalayan salt if needed. Drizzle with a bit of evoo. Plate atop quinoa/bulgar grain.
