Easy Tofu Scramble

Hey loves!! I'm a lover of everything tofu! Lately I've made it many different ways ( I will post at a later date), and surprisingly, my 6 year old daughter loves it as well! 10 points for Mom! Besides

being high in protein content, tofu is a power packed food substitute for vegetarians and vegans because it doesn't contain animal products of any kind. I am on a journey to veganism. I'm close but not all the way there just yet. Tofu also known as bean curd, can be made in a sweet or savory dish. This Tofu Scramble is quick, easy, so filling and delicious! Hope you enjoy!


Ingredients

8 oz extra firm tofu
1 green bell pepper
1 red bell pepper
2 tbs evoo
ground pepper
ground cumin
red pepper flakes
garlic salt to taste
Bragg's liquid aminos

Directions

Place tofu in a clean, absorbent towel, on top of a plate. Put a heavy skillet or use another plate on top of the wrapped tofu in order to press the liquid from the tofu. Press until the liquid is absorbed into the towel. In doing so, it makes it much easier for the flavors to absorb better. Nothing like some tasteless tofu! :( Set aside. Chop peppers, heat olive oil in non stick skillet on med high, saute veggies about 5 minutes. Reduce heat to med, crumble tofu into pan. Stir  frequently, season to taste as you go, add liquid aminos. Cooking about 10 minutes or so until tofu is slightly browned. Serve and enjoy! I go back for seconds every time! ;)
