Hey loves!!! So, the only way to get my 6 year old daughter to eat pears is to create something fancy. She devoured this dessert, as did I. 1 son was down, the eldest not so much! Lol....now the sauce I made for them to roast in was AH-MAZ-ING!!! Mixed in a bit of dried thyme ( I opt for dried if fresh herbs aren't on hand) for a hint of earthy flavor. I love the combination of adding herbs to fruit. It's quite delightful!
3 Bosch Pears
2 tbs coconut sugar
1 tsp vanilla
1/4 tsp salt
splash of brandy ;)
1 tbs cinnamon
1-2 tbs vegan butter
half of fresh lemon
Slice washed/dried pears in half. Core each half.
Rub each open side of pear with the lemon. This helps to prevent the fruit from browning.
In a casserole dish, use about a tbs butter or so to piece all over the bottom of the dish.
Place pear halves in dish, skin side down.
Mix ingredients in small mixing bowl then pour in to the dish, drizzling over the pears as well. Bake in a warmed 350 degree oven about 25 min.
Once baked, remove from oven. Baste pears with remaining liquid. Set aside to let cool before adding the ricotta.
1 cup ricotta
honestly I just shake cinnamon until it looks how I like it!
1 tsp allspice
use enough raw honey until the taste is sweet as desired
mix thoroughly & chill
* Once pears are completely cooled, plate, dollop with honeyed ricotta, sprinkle with dried thyme or fresh if on hand. Enjoy!!
