Carrot Ginger Coconutty Soup

Hello loves! Happy Thursday! So, although we were in the high 90's yesterday, I craved a nice bowl of soup. Having all the fresh ingredients, (along with coconuts especially) I decided on this yummielicious Carrot Ginger Coconutty Soup. A perfect fit being I had the a/c running so it was a tad bit cool in my home lol, I'm looking forward to fall because this will be a family favorite! Put this recipe aside until then if you are the type of person who refuses to indulge in something warm as such in the summertime. ;)

Vegan, Organic, Gluten Free
Ingredients

2 cloves garlic; chopped
3 tbs fresh ginger; peeled & grated
about 5 carrots; peeled and sliced
1 full tbs raw honey
1/2 yellow onion; diced
sea salt to taste
2 cups fresh coconut milk
3 cups vegetable stock (previously made, frozen & thawed)
1/2 cup cashews
juice of half a lime
2 tbs olive oil

Directions

In large saucepan, saute onion until translucent on med high heat
Add ginger & garlic, saute for about 2 min
Add all other ingredients to pan and simmer until carrots are soft when poked with a fork
Let cool for about 5 minutes
Pour mixture into food processor or Vitamix; squeeze lime, cashews, blend until smooth & creamy
Pour soup into bowls

*Fresh mint for garnish
