Thai Fried Rice with Fish & Bacon

This is a staple in my home. This time my eldest son requested no pineapple, HA! DONE!






Ingredients

2-3 large (wild caught) whiting fillet, diced
3 green onions, cut with kitchen shears
3 slices thick smoked turkey bacon, diced, fried
4 tsp curry powder, divided
3 large brown egg yolks, divided
3 cups previously cooked jasmine rice (day ahead)
2 dried red chile peppers
1/4 c chopped cilantro leaves
2 tbs Bragg liquid aminos (natural soy sauce alternative)
2 tsp oyster sauce

Directions

Place bacon in large non-stick skillet, cook while stirring until browned & crisp.
Remove bacon, set aside. Heat olive oil in same skillet, stir in fish, cook for about 3-5 minutes, mixing frequently.
Add half of the curry powder and mix until fish is well coated, set aside.
Reduce heat to medium-high. Add beaten egg yolks, stir until set.
Add day old, cold rice, breaking up as you go along. Mix sauces, cilantro, chile pepper, remaining curry powder into rice mixture until rice is hot. Fold bacon and fish into rice. Top with green onions.

* When making this dish with pineapple. I simply slice a fresh whole pineapple in half with stem, carve out 3/4 pineapple inside, dice, fold into the rice mixture at the end. Fill pineapples with rice as bowls and voila! Bon appetite!! ;)
