Yummy Sweet Potato Muffins

Hello loves! Most Saturday Mornings I create something yummy for my family. So, I decided to use up a couple of sweet potatoes and make tasty muffins!
Hot out the oven!

So delish with my Cinnamon Hazelnut Cuppa Joe!



Ingredients

1 1/4 c organic coconut sugar
1 1/4 cup cooked mashed sweet potatoes or yams
1 stick of unsalted butter, softened
2 large brown eggs
1 1/2 c coconut flour
2 tsp baking powder
1 1/2 tsp cinnamon
 1/4 tsp nutmeg
1/4 tsp salt
1 c almond milk

Directions

Preheat oven to 400 degrees. Spray 24 count muffin pan with non stick spray or use paper liners. Beat sugar, sweet potatoes, butter until smooth and creamy.  Add eggs and blend well. Sift flour, and all dry ingredients together. Add with milk to sweet potato mixture. Stir and blend well. Be careful to not over mix. Spoon into muffin cups. Bake 25-30 minutes or until done. Press on top of a muffin, if it bounces back, they're done.
