Plantain with Butter Pecan Ice Cream & Coffee Sprinkles

Ate a similar dessert dish sometime ago & decided to recreate it. It's real simple and quick! So delicious!!!


2 ripe plantain
fresh berries
butter pecan ice cream
fresh ground coffee grounds
organic honey
ground cinnamon


peel, slice about half inch thick
heat 2 tbs organic coconut oil in non stick skillet
place plantain slices in a single layer and cook until browned, about 5 min each side
remove from pan onto plate
sprinkle with cinnamon and honey
scoop desired amount of ice cream on platter
sprinkle with coffee grounds
fresh whole strawberries (optional)
