|Authentic Sorullitos De Maiz ( corn fritters )|
1 1/2 cup of yellow cornmeal (pre cooked)
4 tbs organic sugar
1 tbs butter
2 cups water
1 cup mozzarella (queso)
1/4 cup mayo w/olive oil
1/4 cup organic ketchup
1 tbs sriracha
Boil water, butter, and sugar in large pot. Reduce flame to low, add corn meal, mixing thoroughly until liquid is absorbed.
Remove from heat. Fold in cheese with spoon. Remove corn meal from pot into bowl. Allow to cool about 5 minutes.
Heat canola oil in deep fryer. Form Sorullitos by the spoonful into shape pictured. Brown them in deep fryer, plate along with dipping sauce and enjoy! Will be nice and crunchy on the outside, soft and creamy on the inside. Buen Provecho!
